Tomato's can produce a lot, though some can get sorta big, if you let them.

Also beets, since the root and the tops can be eaten. Can be planted fairly close togather and are pretty hardy.

    Thanks for the suggestions guys!

I was thinking about using pots, because I live in an apartment.

would root type veggies be too big for pots?

They would have to be very deep, but I don't see why it couldn't be done. Agh, I miss my carrots...
Growing some mixed greens in a window box is a good way to keep fresh salad around.
I like green and yellow bush beans, because they don't need support and don't take up much space at all.
If you want tomatoes, you'll have to get some decent-sized pots and cages. Hopefully you have a lot of windows to let light in on all of your little darlings. Tomatoes can be real hogs. I put them too close together outside once and it was like a little rainforest out there. ;)

5-8 Litre pots will be fine for tomatoes when they get about a metre high pinch out the top shots so they don't grow any taller, they will grow fatter tho so be warned

When they get big and start to grow tressles pinch the top shoots comming off the main stem, this stops it from growing up anymore also pinch out the side shoots these can be found inbetween the main stem and one going off to the side

Haha, okay, that's what I thought, but it was such a funny image I had in my head of walking up to a tomato plant and pinching it and having the plant slap me and go "quit iiiiit!"
