Songs where the singer absolutely pours his heart out?

This eve' am preparing an intimate meal for two. On the menu is a citrus salad featuring fresh pineapple, strawberry and mango on a bed of Mesclun greens, served with a tart orange honey mustard lemongrass vinaigrette. For entree we shall have a grilled and marinated lamb loin chop, cooked extremely rare, served with a rosemary cassis reduction sauce along with a sweet potato duchese and grilled asparagus with homemade hollandaise sauce.

We shall enjoy our meal and soft-spoken conversation with an assortment of crusty rolls served with flavored olive oil and roasted minced garlic.

For dessert we shall feast on fruitti di bosco served with a raspberry coulis sauce.

The dinner shall be served on the upper echelon of my veranda, looking over my vast southern acreage as the sun slowly meanders it's way behind the hills. At the small table will be a pressed white tablecloth, a tall candle flickering lightly, and we shall be served by my staff as we enjoy our evening.

The only thing that's missing is a proper music selection. I don't know what sort of songs would be appropriate for my young nephew and I to enjoy during our meal.

Damn, that sounds like a great dinner. Ok, since the title of the thread is a singer who pours their heart out, what immediately comes to mind is Rossington Collins Band. There is no one who sings with so much passion as Dale Krantz. Oooops, you did say "his" heart out. Ok, if it has to be a male singer, go with some Dio, preferably from his Rainbow days.
