no-cooking, no-sandwiches, meals served cold

    Does anyone know of any good meals like this? I'm hunting all over the internet, but every recipe I find calls for precooked meat or pasta. I just sent my husband to the store (at 11:30pm) because the fridge is empty, but nobody wants to eat. When I heat up the oven or stove even for a few minutes, the air-conditioning kicks in almost immediately and it's running continuously right now as it is so I really DON'T want to do something like pasta that would create even more heat if I can avoid it. DD & I usually don't eat much when it's hot out, but it's hot enough right now that even my guys don't want to eat... but skipping meals until October really isn't an option.

    We've been eating a lot of:
    * veggie salads with or without cheese, eggs or sunflower seeds
    * pretzels & cheese with fresh fruit or veggie sticks
    * wrap sandwiches - though when wraps are $4 for 6 these are a bit of a rare treat
    * fruit smoothies & a handful of nuts
    * and when nobody wants to even think about food, I pretend that banana splits are a balanced dinner.

    Any other ideas? I'll be going through a raw cookbook with the kiddies tomorrow, but I don't have a juicer or super-blender & that seems to eliminate quite a few of the recipes. My guys are carnivores - but when it's hot out they prefer veggie, vegan or raw foods so we're all up for some new food-adventures!

    solar oven in the yard?
    crock pot for the precooked? and doing that as weekly portions?

    Oooh, thanks! I've gotta see if the lil man wants to make a solar oven - he'd love it!

    It's not so much that I can't find ways around heating the food... we haven't quite replaced the nuke yet & I've brought the crockpot out onto the deck before. It's that the monkeys don't want to EAT anything that's hot!

    Bananas are on sale this week at .33 per pound so it's smoothies for breakfast all week! We're chopping up some sweet potatoes & cala... uhh, Mexican zucchini (?) to make dehydrated veggie-chips & vegan spinach-dip for lunch tomorrow too... lil man found a couple recipes he wanted to try. I've gotta hunt up medjool dates this weekend too, because he also found a recipe for raw carob-truffles. There's a middle-eastern market not too far away, I'm hoping they'll have 'em because most of our "scanda-hoovian" grocers wouldn't have a clue!

  4. Loads of cut up vegetables and a couple of dips like homemade mayo and guacamole served with big chunks of bread usually works for people who don't want to eat. Sometimes the sight of a big plate of food can be quite off putting if your not very hungry. Bananas mixed with greek yogurt and honey - delicious. traditional andalucian gazpacho for starter - it's a chilled tomato soup with no cooking require. I have a brilliant recipe if you want it. In fact I'll just give you it anyway

    5 large ripe tomatoes - the riper the better
    1 green pepper
    1 medium sized cucumber
    3 cloves of garlic
    stale bread- about a third of a baguette
    pinch of salt
    wine vinegar
    olive oil

    the oil, vinegar and tomatoes are the key ingredients. You can mess around with the rest to suit yourself

    soak the bread in water
    cut tomatoes,pepper,half the cucumber and garlic into chunchs and add the bread
    Blend or do what I do and use a mortar and pestle
    add salt, a half a cup of olive oil and two tablespoons of wine vinegar
    blend again until really quite smooth
    if it's a bit thick add some more water
    garnish with finely chopped cucumber
    serve very cold

    ENJOY!!!!!

    I recall that every raw chef at Denver Veg fest used dates. I was soooo tired of them by the end (I was a prep slave)

    instead of wraps use some sort of lettuce....make up some (red pepper) hummus, add some sprouts, maybe tomato, cucumber in there if you like it....theres a perfect wrap....saves $$ too and soooo yummy

    For dinner you could make, what I call "pepper boats" (I just made that up!)
    -cut a bell pepper in 2 and empty the seeds out. Keep it to fill it out with the
    following:
    -chop 1 mango,
    1/4 or 1/2 avocado,
    green onions,
    juice of 1/2lemon or lime,
    tomato,
    basil.
    Mix it all in a bowl.
    -Fill the pepper boats with the salsa you just made.

    Raw Not-sagna (serves 2)

    Veggie portion:
    - 2 thinly sliced zucchini
    - 6 thinly sliced crimini (baby portabella) mushrooms

    Tomato sauce: Blend together in food processor to chops roughly;
    - 1 cup sundried tomatoes, soaked for about 30 minutes
    - four cloves garlic, minced
    - handful of basil

    Creamy sauce: Blend together in food processor until smooth;
    - 1/4 cup soaked sundried tomatoes
    - 1/4 cup sweet organic cherry tomatoes
    - 2 cloves garlic
    - 1 teaspoon olive oil
    - 1 handful chives
    - 1 whole avocado

    Layer veggies, tomato sauce, more veggies, and creamy sauce. Voila!



    For dessert: Dessert Taco

    - Taco Shells
    - 1/2 cup gluten free oats
    - 1 cup almonds
    - 1 cup dates
    - 1/4 cup cocoa powder
    - 1 Tablespoon chili powder
    - 1/8 cup coconut milk
    - fresh young coconut meat, cut into long shreds resembling cheese

    Process oats, almonds, and dates together in food processor until creamy. This will serve as the "meat" of your taco.
    For the sauce stir together cocoa powder, chili powder, and coconut milk.
    Garnish with goji berries & shredded coconut if desired.

    hmmm. hot probably isn't the issue in Minnesota right now, but summer rolls came to mind, the ones made from raw veggies and using rice wraps dipped in hot (tap hot is fine) water and dipping sauces on the side.
    I had some on New Years with spinach, watercress and mint...luscious.

    My mom makes the most amazing Greek yogurt dip called Tzatziki

    16 ounces of thick Greek yogurt
    (We use total 2% Greek yogurt)
    4 to 10 cloves of garlic , finely chopped
    1/2 cup of grated cucumber
    1 tablespoon of olive oil

    Combine everything until its evenly distributed. Refrigerate (optional)

    You can play around with the amounts of garlic and cucumber. You can eat it with carrot sticks, pita chips, e.t.c.
    Personnally i think it tastes best with alot of garlic and less cucumber.

    have you tried hummus?
    also when im bitish at night i eat cherrios like a kid lol but that might not be your thing
