That would be cool. I've seen people do similar type things.
I'm guessing what you would want to do is cut the pumpkin so that the white part is where the light is shining through.

 

i have seen a pumpkin with a peace sign in it, it was so shweet

 

you should get a bunch of fruit by the foot and make a big tongue

If your pumpkin carving skills are good enough I think you should do it. That would be the best jack o lantern I've seen.
