Looking for new vegetarian food ideas to take with me when camping this summer. Interested in how others take on these lovely challenges. (i just made a batch of homemade granola bars, but looking to expand.)
if you have a propane stove, canned vegetarian chili is awesome for camping, also a big bag full of cereal and peanuts to munch on and get carbs and protein for energy.
Beans are always good. Even when I hike, I throw the dried ones in a ziplock with some water to rehydrate but they do take longer to cook. And if you're taking the time to cook beans, rice is a nice side dish. Rice, some diced fresh veggies, season with Adobo and Sazon is always rib-stickin'. I dehydrate a lot of my own foods for hiking, you can rehydrate them while you hike as I described the beans above.
soup is always good or a tufurkey sandwich wit avocado, lettuce, tomato and vegan mayo, with lays. yummy
beans are good. i cooked veggie patties over the fire. it was hard though and they didn't taste as good.
I went on camping trip down at the beach about 2 months ago. and if you have a little grill, definietly buy potatoes to make baked potatoes. with some ranch dressing, YUM! they take quite awhile, and it's best to wrap them in tin-foil...but they are so good. We also brought cereal, cereal bars, PB for sandwiches, PB and Honey sandwiches are pretty good. Beans! Veggie dogs. We also made smores. Hope that helps!
fruit leather, PB and maple syrup, rice noodle spagetti I love that stuff, chex mix, homemade of course, and granola trail mix with rasins dryed cranberries and bananchips
I am not a vegetarian, but I eat vegetarian when I go backpacking. For breakfasts I like wheat tortillas with peanut butter, and you can mix dried fruits and nuts with it. I roll it up and eat it, burrito style. Lunches I do granola bars, trail mixes... just easy things to eat on the go. And dinners are usually a pasta, or something to give me carbs for the next day.
For a quick, easy, and delicious supper ... dice a potato, an onion, and a couple of carrots. Salt and pepper as desired. Wrap them tightly in a couple of layers of aluminum foil, turn your camping stove to its lowest setting, and place the package onto the flame. Takes several minutes to cook, but oh so good!
you ever watch a Chinese chef cook stir-fry on a huge flame in the restaurant? That's the same principle I use when I cook, with a more reasonable sized fire of course. Take some time before you leave to prepare your foods and sauces, and stir fries are a very easy, extremely flavorful way of cooking on the trail. Plus it cooks quick, which is always a bonus.
I don't use a camping stove, but once the fire has burned a bit, you can scrape some hot coal/embers to one side and do the same thing. I agree, easy delicious and nutritious. I am not usually a big fan of potatoes, but when hiking or backpacking, the extra carbs are good for the energy levels.
