I can't recommend Honduras enough. You don't have to travel far into Honduras and you can check out Mayan ruins in Copan. Or, you can go to the Bay Islands. Of course, there are a lot more Mayan ruins in Guatamala than Honduras...but Honduras has some of the best. You will have a blast. I just spent the last 8 months living in Honduras.
Depends where in Latin America. Some Latin American countries have terrible crime issues, others don't. Where exactly are you looking at travelling?
You'll be fine in any of them. Just got where you should, avoid the areas you should avoid, and always try to be with at least one other person. You'll be fine.
