agave nectar

    I'm sorry, the search function didn't seem to want to bring anything up this time. The more I read about agave nectar, the more convinced I am that I should try it. I know it's "safe" for us and know what to look for in case of allergic reactions. But before I run to the store... could anyone answer a few questions?

    * Taste-wise & thickness-wise, how does it compare to honey?
    * Can I bake with it? If so, are there any differences I should know about like lower temperatures? (I DO know it's a 1 to 3 ratio for sugar substitution)
    * I know it's supposed to be "better" for diabetics, but does anyone know the actual carb-numbers showing how it compares to honey or sugar? (my mom's diabetic & it's 100% diet-controlled)
    * Should it live in the fridge or on the shelf & does it crystallize like honey... and if so can I safely heat it to melt the crystals?
    * It supposedly dissolves well in tea, but would it help with sore throats like honey?

    And if there's anything else I should know, I'd love to know that too! Thanks :)

    Its milder. Its a little thinner
    Bakes just like honey.

    "Total Carbohydrate Grams: Serving Size: This product falls into the "honey" category, and thus its serving size is 1 tablespoon (note: tablespoon and not teaspoon). In turn, 1 tablespoon of Agave Nectar weighs 21 grams. Based on the fact that it contains on the average 77% solids, one serving (1 tablespoon) contains 16 grams total carbohydrates (21 grams x 77% = 16 grams)."

    I keep mine in the spice cabinet.
    "Agave Nectar will not crystallize. It is high in purity and stable in composition. It is easy to store as it has a very long shelf life, approximately three years. "
    It wont compare to natural honey as far as any soothing properties. But it beats the a lot of the shitty store brand honeys.

    Ohh, thank you SO much!!! It definitely sounds like it's worth trying! If nothing else, I should be able to bake lower-carb goodies for my mom... and have something that doesn't need reheating every time we want to use it!
