kid friendly vegan recipes

    Hi there. I was a vegetarian for about 8 years and have recently made the transition to being vegan. It feels great eating only foods that grow from the earth and living a cruelty free lifestyle. Anywho....I have a 5 year old daughter who has also proudly made the switch and Im just wondering if there are any other vegan families on here with kids. If so...would you be at all interested in swaping recipes? Fell free to share your favorite recipes even if you dont have children. Thanks!

    Hi, and congratulations and thank you on living a cruelty free lifestyle!!

    So here is a recipe i make a few times a week, literally. I'm practically living on these things, and the way i do it, they're like power bars. Going to be very popular with kids though, guaranteed! ; ) Because it's about chocolate. = )


    So check it out:
    these will make you popular
    with friends, guaranteed. Very little sugar, too! just what's in the
    ghirardelli semi sweet. I use xylitol,
    which seems to be a quite safe and healthy alcohol of sugar that
    actually lowers your glycemic index and helps prevent tooth decay.
    Lately i've been using half brown sugar to the xylitol, and that's been great too. It's up to you.

    i use:

    -1 bag of ghirardelli semi sweet chocolate chips
    -a little over 3/4 cup of Rice Dream original rice milk
    -1 jar of smooth peanut butter (I've used whole foods 365 brand and Teddie, both work great. Organic if you can afford it, if not you won't miss it)
    -xylitol or sugar, add to taste (3/4 cup or so?)

    -roughly 2 cups organic quick cook oats (feel it out as you stir them
    in, you might want less)
    -raisins (very optional)
    -crushed walnuts (very optional)


    Directions:

    do you have a double boiler? helpful, but you can do this without.

    -start the water underneath, get your pan warm
    -add the rice milk
    -add your chocolate chips and stir while they melt
    -add peanut butter, stir well
    -add your sugar or xylitol, stir, taste. taste again.
    -once your mixture is stirred well and pretty warm, stir in your quick
    cook oats

    -let cook a few minutes while stirring
    -finally, add the walnuts (completely optional) and add your raisins
    last (also optional)


    Drop with a spoon onto waxed paper. I use cookie sheets.

    Enjoy warm if you like, but once they cool, cover with more
    waxed paper and put in the fridge. Eating the remainder from the pan
    with a spoon seems to be a popular part of this process. ; ) Hope that helps. Enjoy!

    I have a few recipes that are kid friendly
    *Cranberry spaghetti squash*

    I wanted to post this one because she can help scrape the spaghetti and help add ingredients and all.

    Get 1 medium spaghetti squash
    2 Table spoons of earth balance butter
    2 scallions thinly sliced
    1/2 cup of cranberry's
    1/4 cup of finely chopped walnuts or almonds (or whatever kind of nut you all like)

    Preheat oven to 400
    Cut squash in half
    remove any seeds or stem
    Cut side up in casserole dish with 1/2 of water
    Cover with foil and poke holes in it with fork
    put it in the oven for 40-45 mins
    When you pull it out make sure it is cooled down
    (if she is going to help you can stick it in the fridge for a little bit to help it cool down.)
    When cooled down get a fork and scrap the goopy side of the squash
    ( try not to damage the shell)
    it will make spaghetti strains
    Put the strains into a bowl and toss in the other ingredients
    then poor it all into the shell then put it back in the oven for about 10 mins
    then season with salt/ pepper

    Enjoy!! :D

    *Sloppy Joe*
    1/2 of a table spoon of olive oil
    1- medium onion finely chopped
    on 12-16 ounces of soy crumbles
    1- 16 ounce jar of tomato sauce ( or make your own sauce)
    vegan bread or buns

    Heat oil in large skillet
    add onion till golden brown ( medium heat)
    add soy crumbles ( medium heat)
    stir for 4 mins in till crumbles are lightly brown
    Stir in sauce for 3-4 mins in till heated threw
    then Serve on bun or bread
    Enjoy :D

    *Vegan tuna spread*
    1 - 8 ounce package baked marinated tofu ( suggestion: soy boy)
    1/2 cup of soy mayonnaise
    1 large celery stalk(finely diced)
    1 scallion minced( or some minced onion) ( optional)

    Using hands finely crumble the tofu in a serving bowl
    Put diced celery in bowl with tofu
    In a separate small bowl combined vegan mayo, mustard and curry powder and stir
    Then poor mix over tofu and celery
    mix well and season with salt/pepper
    You can put it on wheat pita or baked chips or on toast
    Enjoy :D

    *Outrageous Oatmeal*
    1-3/4 cups of soy milk/rice (vanilla )
    1 cup of rolled oats
    1/4cup of dried apricots
    2 tbsp dried raisins/blueberries or cranberries
    1 mashed banana
    3 fresh strawberry's sliced
    and as much pure maple syrup you want
    ( optional: nutmeg or/& cinnamon)

    Place vegan milk ( soy or rice) in saucepan
    heat over medium for 2 mins. Stir in rolled oats and reduce heat to low. Cook for 3 mins and stir occasionally. When mixture begins to thicken add the fruit of your choice then cinnamon/nutmeg. Continue to cook still stirring occasionally for 2-3 mins or until liquid is absorbed and oatmeal is thick. Spoon into bowls add pure maple syrup &/or extra soy milk

    Alright that's all I can think of for right now lol
