More options for my kitchen

    Let me start off my saying, I'm not a veggi, nor will I ever be a veggi, however I think those who can handle that lifestyle are awesome.

    I'm in my twenties, and I take care of my mum, dad, and fiance because they all work full time, yesterday the topic came up of processed foods and my mum said that if she had it her way that we would be a vegetarian family and no meat.

    Now I don't have any problem with her wanting that, but I know that it wouldn't work for me (I HATE veggies, I think they taste bad :p) or my dad and fiance who are passionate lovers of meat. However, as the chef of the family I am more then willing to add more vegetarian options into the household, but where do I start?

    So, I was wondering if you wonderful people would be willing to post your favorite things to eat, that aren't painfully processed so I can offer my mum what she's looking for.

    One of the first sites I was directed to when I reconsidered vegetarianism was Meatless Mondays. They send you a recipe or two once a week, and of the ones we've tried MOST of them have been downright yummy. I've got a mixed-diet family too, and it's a fun balance to get the meatosaurus people what they want while steering clear of what I DON'T want to eat.

    Some meals we ALL like here are:
    * breakfast-for-dinner... pancakes or hash browns & egg/tofu bake (we use 50/50 & are weaning ourselves from eggs) make a fun switch at dinnertime - especially when you're usually too busy in the morning to EAT these foods.
    * Asian stir-fries... you can cook the meat separately with NO extra effort! A little edamame (shelled soybeans) would give Mom the protein she's not getting from meat.
    * loaded 'taters or taco salad - again, any meat is naturally served on the side.
    * shepherd's pie... I use a vegan recipe, but my meatosaurus men don't MISS the meat! Actually, I've found a ton of recipes where this is true - where the addition of garbanzo beans, mushrooms or a little cheese mean the guys don't even miss eating meat.
    * and especially when it's cold, how about minestrone or garden-vegetable soup with a nice dinner roll, or Santa-Fe chowder or chili with cornbread... chili is REALLY GOOD without meat!
