a good 4 year old cheddar is probably my all time fave. certainly can't go wrong with a good blue, no 2 are ever the same brie, camenbert, goats cheese, smoked gouda, farmers, havarti damn, I want some cheese now has anyone ever tried borgonzola? man, that's some stinky shit

my fave cheese is gorgonzola, with fuji apples and fume blanc. my stomach can't really handle wine and cheese together though, so it's a rare ocassion.
i like most cheeses but some are disgusting; lindberger for example. i come from cuba, ny which is famous for its cheese. i once went to a beer and cheese festival. i wouldn't really call it a festival but that's what they called it. i think tickets were like $15 and you got to sample beers from ellicotville brewing company, some bison brewing company from buffalo, and some becks...some others too. and all the amazing cuba cheeses!
What I love to do, is with left over hamburger buns or hotdogs buns, you put slices or chunks of cheese on the buns and broil them in the stove. We call it "cheese bubblers" and dip them in ketchup.
