I saw this on Shaman's "shopping list" in another thread & got to thinking about quinoa in general. This is a food I'm rather new to, but I LOVE it! So far I've had it as hot breakfast cereal, (reminds me of cream of wheat... with tails) in a yummy casserole with leeks (tasted like stuffing) and a few Mexican "pasta" salads. Our LHFS just started stocking Ancient Harvest Quinoa pastas, and they're our new favorite for flavor & texture. Does anyone else eat this? What's it good in? And... my kids think that the "tails" are funny. Are there any recipes out there that kind of mask those little guys? love, mom
It is so good if you add a little tumeric to it.. then cook some veggies of your choice in some coconut oil with some ginger, garlic, black pepper, and a little cumin!! also its good in pretty much any type of salad that you can think of.
I've cooked it in a bit of veggie stock, added some other veg, like spring onions and finely diced tomato, and then rolled them into patties, binding them with a bit of a flour and an egg. I roll them in breadcrumbs and dry fry them. You can have them as is, on a burger, or have them cold on a sandwich the next day. Very tasty. I havent tried them with cheese or anything in them though, but I think thats going to be my next experiment
I love quinoa! I started eating it a few months ago after reading about how nutritious it is. I don't have any specific recipes for it at this time. Mostly what we have been doing is substitute it for rice or mix it in with rice. It works great for things like Spanish Rice, I guess you would call it Spanish Quinoa instead, and stir fries. It is pretty good in stuffed peppers, too.
I love quinoa too. Good stuff. Way yummy. As for ways to make it...I made up a dessert when pressed for time...Pretty much involves mango nectar, coconut flakes, and pineapple...have fun with those ingredients for a yummy dessert. If you are not vegan, it tastes good w/ Light Cool Whip.
