I made this as a side, but it can also be an entire meal in its own with some salad.... In a medium size pot (or large saucepan) gently heat 2 tbsps olive oil. Add 1 small red onion (diced fine), 1/2 cup toasted roughly chopped almonds, 1/2 cup diced apricots (i use dried, organic ones). Saute on low heat until onions and apricots are soft and translucent. Add 1 cup uncooked couscous and 1 1/2 cups veggie stock. Stir well. Add 1 tbsp. lemon zest. Stir. Cover and let sit (no heat) for 10 minutes. Uncover, fluff and add 1/4 cup chopped (fine) mint leaves, 2 tbsp. finely chopped cilantro, 1/4 cup chopped scallions, 1 tbsp. fresh squeezed lemon juice, 1/2 tsp. black pepper and a drizzle of olive oil. Turn heat back on to low and stir until well combined......serve.
