Hello all! I am gearing up for thanksgiving with my family of omnivores. One of my brothers is preparing the meal, which will be focused on turkey, but he is very conscientous of my decision to not eat meat, so he thought I could give him a recipe for vegetarian stuffing, etc. I refuse to "make" him cook up a faux turkey, though I'm cool with him making the stuffing. Although I'm cool with him making the stuffing, this is sort of an exception because it seems like most people who are omnivores making food for vegetarians seem to think it's ok using chicken stock and things that like that so I generally distrust omnivores making my food, but my bro knows whats up so I'm not worried. In regard to the faux turkey I would like to consume on thanksgiving, as I mentioned I don't want my bro to cook as he is already making the other stuff and I don't want to be an inconvenience (among other things (but mostly those others things)), which my choice to not eat meat has made me, even if some veggies don't agree. I also don't want him to cook it because I want to know how for future vegetarian thanksgivings! I like cooking and it's valuable experience, esp. since it only comes once a year, so times to get experienced with this sort of thing is limited. Ok so now to the main point - I want to make a turkey substitute so I can eat happily with my omnivorous family who I love very much; this will make me feel good and my friends & family will not feel bad for me only eating mashed potatoes and other sides. Therefore; I am asking for a good recipe for faux turkey - Please! This is something that I'm not going to make ahead of time, which I realize isn't that smart, but I don't want to eat leftovers of what I'm about to eat on Thanksgiving day for 2 weeks prior! All recipes are very welcome (vegetarian & vegan). I searched on the internet but couldn't find anything with much credibility. Thank you so much. Brad
If you don't want to spend too much time on it, why not buy a pre-made faux turkey? I don't suggest Tofurky brand; it's yucky. So far my favorite is "Unturkey". It includes stuffing and gravy too! There's also one made by Quorn, which is mushroom-based, and it's a lot smaller; it'd probably serve 1-3 people.
