Tofu replacing egg

    Has anyone done this.....I tried it with cookies last night, it was AWESOME!!!! anyone got any other ideas for good recipes??

    Back in the day when i used to eat eggs my mum would make these really yummy fried noodles with eggs. Since becoming vegan i have replaced the egg with soft tofu and it tastes great!

    Here's the recipe....

    You need:
    packet of noodles (something like 2 minute noodles)
    Soft tofu
    butter/margarine (vegan of course)

    What to do:
    Cook noodles following the directions on the pack, don't forget to include flavour sachet
    Once noodles are cooked, drain and put back in sauce pan
    Add soft tofu, mash it up and mix together
    Heat up butter in frying pan, add noodle and tofu mixture and fry on either side until golden brown

    I used to add parmasen cheese to it so a vegan version would taste great with it.

    I have not replaced eggs in a such a recipe with tofu. It depends on what I am making but I usually use ground flaxseed in place of eggs. Scrambled tofu is really good using the recipe from Vegan with a Vegence. :)

    I have a few times, with mixed results. It makes a pretty good "omelette" and are great in other "eggy" dishes, but I haven't been brave enough to try it in more than a few baked goodies yet and sometimes it turned out & other times... well, it was a learning experience.
