does anyone have any good suggestions on the best way to dry and candy your own flowers (with no peticides or herbicides on the flowers of course)? I had some really good homemade trail mix with candied hibiscus flowers, dried green beans, chili powder-covered dried mango, granola and pretzels and it was delicious! I would really love to know the best way to candy my own flowers so I can experiment. much appreciated!
here's the only link I could find without egg whites: http://www.twincitiesdiningguide.com/pages/Crystallized_Flowers.asp I'm thinking gum arabic fills the position of the egg white, and other recipes could be altered with it.
I've had candied violets & rose petals several times. While I've heard of the egg-white version, the one I learned was shortly after the eggs/salmonella scare and is egg-free Take 1 cup sugar & 1/2 cup water, and make into a syrup on the stovetop. Boil the syrup until it's slightly thickened, then remove it from the heat. Let it cool enough that you can handle it, and dip your violets into the syrup. (I keep them on the stem for this part) A tweezers helps if you're doing petals to keep them from curling up. Pull them out & lie flat to dry completely on wax paper, and keep refrigerated until you're ready to use them. You can flavor the syrup if you want by adding a few drops of almond, vanilla or orange flavoring as well... and my mom loves adding coloring to get DEEP colored rose petals for cupcakes! Really though, it's just sugar-syrup! That's it love, mom
thanks! my friends mom gave me candied hibiscus flowers and they were delicious. I wanted to experiment on my own, so I'll let ya know how it went.
