Hey, I found this in another rainbow discussion group. Some good points on how to make a rainbow kitchen very safe! Safety first!! Preventing Salmonella and other food-borne infection: Wash hands, kitchen work surfaces, and utensils with soap and water immediately after they have been in contact with foods of animal origin. Also, wash hands with soap after handling reptiles, amphibians or birds, or after contact with pet feces. Infants and immuno-compromised persons should have no direct or indirect contact with such pets. Preparing fruits and Vegetables Soil that contains dangerous microorganisms, and dust that can contain heavy metals and other pollutants can settle on the surface of plants and vegetables. The following guidelines help to reduce potential illness from exposure to microorganisms, chemical residue, and other contaminants. Vinegar for Vegetable Bath Wash all produce before eating. Soak whole vegetable (prior to cutting) in a 1% vinegar solution water bath. Let soak for 5-10 minutes. Scrub root vegetables with a clean brush to remove dirt prior to soaking. Peel the skin of root vegetables because the skin is more likely to harbor pesticide residue. http://www.care2.com/greenliving/164.html (Source) Melons: Harmful bacteria can be on skin, and when melon is cut the knife drags the contaminates with it. If unwashed fruit is stored bacteria will colonize in flesh of fruit. Wash and brush with mild detergent, rinse well, then cut into fruit. Dishwashing Three sinks or use "your foot set" up (except sanitizing rinse - items being washed need to soak for 60 seconds - the container used should be one large enough to immerse items in.) 1. Hot soapy that gets changed frequently. 2. Rinse before sanitizing, removes remaining film or soil so sanitizer can work effectively. 3. Sanitizing rinse soak. Cold water - chlorine solution (not less than 100 PPM) at a temperature not lower than 43 degrees C. FOR at least 60 seconds. 4. All items allowed to air dry. Cutting boards: They should be washed with hot, soapy water. After washing, they should be sanitized with a liquid chlorine bleach solution - 1 tablespoon unscented bleach per gallon of water. After bleach rinse, allow to stand for several minutes. Rinse with clear water, and allow to air dry. Laminated boards may crack, split, and warp and should not be used for cutting boards.
