Im making creamy potato soup...because it just sounds great for a change..what is everyone else having tonight?
I had no plans yet, I guess I need to get started it is 5:30 here now that you say potato, I have some waiting to be cooked... I might copy your soup =)
I am preheating the oven right now for a Quorn's tofurkey roast. I actually ran and got on this board to find out if anyone has any neat idea's to bast it in! I don't have many fancy ingredients, pretty basic stuff, but much advice needed! and hurry please thanks in advance
Haven't tried a tofurkey yet... but if it really tastes like turkey like I've heard you could try orange or lemon juice Tonight I'm making up a huge salad with beans (or meat for the guys) on it and we're gonna have fresh strawberries & blueberries with it. Nothing fancy; it's too warm to use the oven here. love, mom
i'm putting together some lentin and rice soup with a little carrot and garlic and braggs and tofu.. maybe i'll make dumplings too.

hmmm.. the guys are eating something with a face on the grill. I think I'll slip some veggies to grill and warm up a frozen veggie green chili tamale and make rice.
the melanzanae Parmigiana sounds great... and grilled veggies are the best... I had grilled fresh corn on the cob a few days agin and it was sooo good.
tonight im having bean and cheese quesdillas...wow i cant spell... hurray!! and this stuff called adobe dip...its blackbeans and peppers...

We just got a food processor as a wedding gift. I've wanted one for years, but it's one of those things I never got around to getting, so yay! I'm just back from the kitchen, from making my first batch of pesto in it. I started out following a recipe but got distracted as I so often do when making food with such familiar tastes. Ended up throwing in a couple generous handfuls of basil, a small bunch of Italian parsley, about 4 average garlic cloves, some salt, homegrown sun-dried tomatoes (re-hydrated slightly by leaving them in a glass of water a few minutes), olive oil and and a splash of balsamic vinegar. I licked a fingerful while I cleaned up my mess, and it's yuuuummmy! Now I just have to decide how to eat it! I may do a pasta thing with some sauted peppers and onions... and garlic toast. That sounds good!
I had a cold salad. Soba noodles, cucumbers, tomatoes, tofu & tamari. I bought some chopsticks and ate the meal like real time Orientals. Chopsticks, ha. I also had some Miso soup with bits of tofu and seaweed. It was delicious. It was MRE-style. Just add water and stick in the microwave and then enjoy. I also had some California rolls that I made myself. I put cucumber, asparagus & vegan cream cheese in the rolls. And a cup of steaming green tea. I'm still full from last night. It was so good.
onions, cucumbers, tomato wedges , let them soak in some vegan italian dressing for at least a day. Then eeeeeeeennnnnnjoy.... peel the cucumber completely, cut in half, take the seeds out, then, cut on a bias, add your tomato, and onion, and marinate!!!!! Thats my dinner YUUUUUUUUUUUUUMMMMMMMMMY!!!!!
I'm making a pasta salad tonight. It doesn't have a name though - we copied/improvised it from something we saw at the grocery store that looked good but we couldn't eat. It's cooked cold pasta with diced tomatoes, cucumber, black olives & onions all mixed up in an Italian dressing. The guys have it with diced pepperoni, my daughter sprinkles hers with parmesan cheese, and I have mine with sunflower seeds on top I like that it's versatile; everyone can have something different, but I've only got to make one meal. love, mom
