I decided to become vegetarian again (last time I wasn't eating the right things and tripped up a bit) so I'm still "new" at this, so correct me if I am wrong, but I believe I just had a wonderful vegan lunch. I had a portabella mushroom sauteed in olive oil and balsamic vinagar, melted Vegan Gormet Mozzerella "cheese" (yeah it actually melted!) on a Food for Life Ezekiel sprouted bun. It was fantastic! Those buns had 9g of protein! They were soooo good. I was very pleasantly surprised. The "cheese" didn't taste like regular cheese, but it was really good. I'm a cheese addict, I could eat a block of cheese in one sitting, I have done it before. I could replace my cheese with these "cheeses" easily if that puts things into perspective for how good I think this cheese is. I figure if I could just find a few more vegan meals that are so good like this I'll be set and probably just go straight to being a vegan. I love dolmas (rice stuffed grape leaves) so there is one right there, I like this bean soup that I have a recipe for, kind of like vegetarian chili, also I really like bean quesidillas with Tofutti better than sour cream and salsa. My favorite breakfast is a tofu/spinach scramble, it's mmm mmm good. I feel healthier already, can't wait to try some more delicious healthy foods.
Yay! One thing to look out for on the "cheeses" though, is casein ( milk protein, I believe). A lot of the fake cheeses found in the veg section of the market (particularly the ones that melt like regular cheese) contain it. It's always bothered me that they put them right there with all the true vegan stuff, and I'm not really sure why they do... probably because it's lactose-free or something. In any case, you may want to check the ingredients to be sure! Another thing to try some time is stir fry. I could eat stir fry forever, and never get tired of it. Since you can switch up the veggies, sauce, protein (nuts, tofu, tempeh, etc.) and carbs (brown rice, wheat noodles, rice noodles, etc) AND it's a great way to wean yourself off cheese a little bit, since it's soooo good without it. Wow, I'm making myself hungry.
Follow your Heart Vegan Gourmet cheese (http://www.imearthkind.com/Main.htm) definitely contains no casein, and it does melt. Personally, I'm not a huge fan, but it does melt nicely and tastes good in soups and sauces.
I just ate chickpea and spinach curry, apple sauce, and walnuts. It was delicious. Just do a search for vegan meals or buy/check out a vegan cook book. Vegan dishes are easy to find and make.
Hmm that all sound good My favourite lunch right now is hummus on toast. My recipe [for hummus] is tweaked from one I found on vegweb a while ago ... 8oz can of chickpeas, drained 1 tbs olive oil The juice of one lemon 1 or 2 cloves of garlic 1/2 tsp cummin 1 tbs soy sauce Throw everything in a blender and blitz til smooth. Yup that simple. I then keep it in a tuperware pot in the fridge, apparently it lasts for quite a while, but I end up eating it all within like three days.
Yeah, I checked, it doesn't. The their web site said that I'd have to travel 30 miles to find a store that carried it, but to my surprise it was at my local health foods store... to my astonishment, it was at my local supermarket! And yes, I love stir fry. I got this sesame and seaweed shake that I like to sprinkle on top, it's great with all veggies, but especially when you add mushrooms. Maybe thats my personal taste though.
if u love chickpeas and sauces and hummus type foods u should look into ethiopian foods...they are almost all vegan and the ones that arent can easily be made that way...its very good for you and the taste is out of this world
OMG that sounds wonderful. Its making me hungry. lol! So what kind of cheese did you use? we use veganrella for pizzas and just rice cheese slices for sandwhiches.
i use vegan gourmet thats made by local people here in eugene oregon..its the best i swear! they sell it at one of our local health food markets
