this is great for if (like me) you dont have an oven you need: 50g butter 2 tablespoons golden syrup 150g crushed biscuits 250g mascarpone cheese 200g creme fraiche 50g caster sugar grated rind and juice of 2 lemons 1 pint of double cream melt the butter and syrup in a saucepan and stir in the biscuits, then press into a greased tin. beat the mascarpone in a bowl and stir in the creme fraiche, sugar and lemon rind and juice. in another bowl whisk the cream and then fold it into the mascarpone mixture, then spoon it all onto the biscuit base, let it chill for a few hrs then enjoy!
