Lentil soup with coconut milk

    I just had this soup for dinner, and it was yummy :)

    You'll need: (for 2-4 persons)

    1 cup of green lentils
    ½ litre of water
    1 onion, sliced
    1 garlic clove, chopped
    1 vegetable bouillon cube
    some chili, chopped
    about 2*2 cm of ginger, chopped
    1 tomato, cut into small pieces
    ½ cup of coconut milk
    some salt
    some drops of lemon juice

    Soak the lentils in water for about 30 min.
    Fry onion, garlic, ginger and chili in olive oil.
    Add water, bouillon cube and lentils and boil for about 10-20 min until the lentils are soft.
    Add coconut milk, tomato, salt and lemon juice. Boil for another 10 min.

    Serve with bread.
