Easy Lunch Ideas

    Anyone have suggestions for easy lunch ideas? I work @ a restaurant/venue where almost everything is meat based and even if you take out the meat it's not healthy at all. I make sandwiches sometimes but I am totally at a loss for good veggie lunch ideas-any help? Thanks!

    I'm a very bland eater, but I love brown rice with cooked veggies mixed in. It doesn't get much easier than that. :)

    white rice, green peppers and soy sauce :) very yummy and you could add other veggies too i suppose :)

    This is the best lunch!

    Tempeh sandwhich filling:

    one package of tempeh cubed and steamed for 15 minutes
    2 stalks of celery sliced thin
    veganaise (maybe a half cup?)
    hing or asofetida (you can use onion if you like)
    a few squirts of braggs
    1/2 cup pecans chopped up
    an apple diced or some dried cranberries
    dried herbs (I used sage and thyme)
    salt and pepper

    You can use whatever you have in it. You can put peppers, shredded carrot, spinach, etc. Just mix it all together and refridgerate. It will keep for several days. Serve on bread alone or with greens, avocado, tomato, sprouts...

    Hmm.... Do you have access to a stovetop or microwave?
    Well anyways if not~~ Make different wraps with salsa/or dressing on the side in lil' dishes.
    Basic Bean and Rice burritos for instance (black beans/basmati...mmm....) Add whatever ever veggies ya want to spruce em up and take along a side of salsa or guacamole or something.
    Falafel, always my fave even cold...
    Veggie pitas with lots of hummus
    Cut up veggies with hummus or some other dip.
    Pasta salad with lots of veggies/chunks of cheese in it
    Leftover veg. pizza
    Make a smoothie and bring it along for lunch
    Ummm.... Veggie meat slices can be alright for a sandwich
    cut up fruit/granola or Trail mix and a small thing of yogurt
    Peanutbutter/honey/banana sandwiches...mmmm
    Soup or Veg. chili in a thermos ...or gazpacho if you can't keep soup warm.
    Well, if i think of anything else I'll add on :)

    Beans & Brown rice are a favorite of mine for lunch sometimes just a hummus sandwich or a salad. Old fashioned P.B.J's are good for quick on the go lunches too.

    I love peanut butter and honey sandwiches, another good one is sliced tomato, sliced avocado sandwiches with cheese on toasted bread. Those are my top 2 quick sandwiches. with that tomato/avocado sandwiches I usually dice a sweet potato and cook that in a skillet with butter and some sugar, just as a side.

    I likes me some soup, lotsa soup! Pasta, steamed veggies, raw veggies, PIZZA (either cold veg pizza or hot veg pizza), cold sandwiches, hot sandwiches. I also like to juice at home in the morning and bring that in a thermos. Ummm.... *brainstorming*....rice & beans, soup (I really like soup), pancakes, salads (now they make those cool salad bowls that keep the dressing separate until you want to add it, and then you can just shake it!

    Where do you work?

    Peanut butter, cucumber and sprouts on sprouted hempseed toast (you can get it at most healthfood stores, co-ops, whole foods, trade joes).. make it better by using organic veggies/peanut butter and few drops of honey is nice too
