we'd weaned him off some of the meat & potatoes meals, but he drifted back. now he's feeling the pinch, his cholesterol levels are scary, despite his trimness. so i'm going to fix him some meatless meals again. want to make it really special to ease his pain. any ideas? stuff you've made for carnivores that they loved, even if they weren't willing to say so...

a lot of veggie things have everything meat does (like protien, ect) and taste just as good, if not almost the same.

I almost find it hard to believe there are still heavy meat eaters with all the healthier tastier options coming up these days. even when I did eat meat up until recently, it was 1-2 a week for a long time. and it was only chicken.

For some reason I find a lot of people are to damn stubborn about food related things and find it prideless to admit to liking something..sounds odd

You can always make him veggie ground (like beef but veggie obviously) and add in other typical quesidea things for a mexican meal: salsa, sour cream, refried beans, cheese.

i do this awesome meatless chili with the spicy black bean patties that morningstar farms has. it tastes wonderful. but i'm not really looking to fake him out, seems to defeat the purpose. i don't mind the meat eating, we're both hunters, but he's started buying supermarket meat. it's just horrible. it sounds really silly, but i've lost sleep over it. he's eating those nasty cold cut sandwhiches and such. totally gross.

Don't believe all the hype about cholesterol. Your body needs a certain amount of cholesterol to function, even at levels many doctors would consider "dangerously high." Over the years they have lowered the acceptable number more and more, when it used to be normal to have cholesterol well above 200. Big pharma wants to get as many people taking their drugs as possible. These drugs are far worse than having high cholesterol, in my opinion

Besides, cholesterol and its link to heart disease is a misnomer. Cholesterol only affects weak arteries. So technically, heart disease is more about nutritional deficiencies than cholesterol, particularly vitamin c deficiency. People who have healthy arteries do not accumulate plaque, no matter how high their cholesterol might be. This is why many of the more well-informed doctors recommend mega doses of vitamin C in the prevention of heart disease. You don't hear this very often, though, because the medical industry is controlled by big pharma. It's all about money. Meanwhile, with all the supposed advances in medical technology and "medicine," society is more unhealthy than ever before. Go figure.

Meat is quite healthy in moderation. I would say there is more of a risk to one's health worrying about it.

I too am a meat junkie, and I would not give up eating meat for anything.

Yeah, meat really isn't as bad as some people would have you think- the key is eating lean meats and not too much of it- It would be unhealthy to eat a 20 ounce steak every day but to eat 6 to 12 ounces of lean meat a day can actually be rather healthy.

I make a lot of my meals with small amounts of meat and lots of fresh veggies- kinda reveresed from the usual meat as a main course and veggies as a side- Veggies are a main course when I cook with meat as a "side"....

That said, if I feel like having a huge, yummy steak sometimes, I will. :D

that's not the problem, it's the lack of variety in foods. he eats only meat, potatoes, and green beans (canned). i'm a hunter, after all, i like meat. it's the production methods of supermarket meat and injections and environmental waste. it's awful. i know quite a lot about cholesterol, too. i also know is that not having any combination of other foods is detrimental to anyone's health.

what i want is some ideas.

Definitely. That is the worst thing about eating store-bought meat. The hormones, the chemicals, the pesticides, etc.. That's why I try to eat only organic meat, but who knows how "organic" even that is.

sounds like he needs to just man the fuck up and learn to eat a variety of veggies

he needs (well most everyone needs) to get out and experience food that isn't made with or processed by these 4 grains: corn, soybeans, wheat, rice

add more leafy veggies in, and an omega-3 supp and he should be set.
buy meat that is grass-fed, and organic, so that it will have proper balance of (or close to) omega-6 to omege-3 ratio.

greater diversity in the species he (all of us) eats, the better off we'll be.

Portabella mushroom sandwiches with veggies and/or cheese on them

If eggs can be included I made a wonderful artichoke frittata the other day...

I made a great salad the other day with shredded romaine, feta cheese, roma tomatoes and steamed and chopped asparagus

    Broccoli soup is always good.

I cook vegetarian meals a couple of times a week, and most of the time my husband says "Honey, that was great. Would have been even better with some MEAT in it."

My husband has cholesterol issues as well. But thankfully he's been working out several times a week which is helping. I mean, we rarely ever eat anything fried, and I cook low-fat, healthy meals. The doctor tells me his cholesterol issues are more than likely hereditary, as my father-in-law has major issues with his cholesterol as well and is on meds for it.

Me, my cholesterol is low, last time I had it checked it was like, 135 I believe. His was over 200. So if we're eating the same exact things, and mine is so much lower, that definitely says something.

When I do cook with meat or poultry, I go for the leanest variety available. Yeah, we have to pay a little more for it, but i figure it's worth it.

mine is 222. which would be REALLY awful, if i didn't have an HDL level of 71. that blood vessel draino is a very good thing and my doc says whatever you're doing, don't stop. our good friend just found out yesterday that she's got a cholesterol level of 222 as well. but she has REALLY low HDL levels, so her triglycerides are really high. sucks for her, she's the healthiest human on the planet. i think she's just eating too much sugar to make up for the lack in protein and healthy fats.
