chinese vegetable soup

    made this today, it tasted sooo good

    1 onion, peeled and sliced
    9 baby sweetcorns, cut into 3
    2 spring onions cut into little bits
    275g baby mushrooms sliced
    1 carrot cut into matchsticks

    heat 1-2 tablespoon of oil in a pan and stirfry these for 3-4 minutes

    add 1.5 pints of vegetable stock
    2 teaspoons of light soy sauce
    1 teaspoon of sherry

    and simmer for 2-3 minutes

    sorry if i sound stupid, but what do you mean by vegtable stock?

    late reply sorry. stock cubes made out of veg. available from all good food retailers

    ooo we make this but instead of stock we use just saute up the veggies in toasted sesame oil and mongolian fire oil. Then add enough water to make it "soup" and add some bragg's aminos to make it a lil' more salty, plus we use soba or udon for noodles.
