Desperately Healthy Pancakes

    I absolutely love pancakes, so I was very excited to find these. They are very good for you, and they taste wonderful! The orange peel gives it a real ZING! (They are even better topped with banana!)

    Desperately Healthy Pancakes

    • 1/2 cup soy flour*
    • 1/2 cup whole wheat flour
    • 1/2 cup unbleached all-purpose flour
    • 2 tablespoons wheat germ
    • 2 tablespoons powdered milk
    • 2 tablespoons unprocessed bran
    • 1 tablespoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt*
    • grated peel of 1 orange

    • 2 eggs, seperated
    • 1/2 cup plain yogurt
    • 1/4 cup oil
    • 1 tablespoon molasses*
    • 1 tablespoon honey
    • 1 1/2 cups orange juice


    Combine the first ten ingredients. Reserve the egg whites and add the egg yolks and the remaining ingredients to the flour mixture in a food processor**, blend well. Beat the egg whites until stiff; fold them into the pancake mixture. Cook on a griddle for 2 1/2 minutes on one side and 1 minute on the other.


    Makes about 36 3-inch pancakes. (I don't make small pancakes. I make big 'uns. I had three, and Jimbo had four. We had five leftover.)


    *Note: I didn't have soy flour, so I just used an extra 1/2 cup of wheat flour, instead. I also never use salt in baking...just a personal thing. I didn't have molasses, so I just piled the tablespoon of honey a little higher :)


    **I didn't see the necessity for the food processer. You could easily just use a blender.

    I've used that recipie before and love it. Here's a similar one for waffles but instead of orange it uses ginger, but has the same yummy effect without all the crap. I use this organic version of egg beaters and it works great! Oh and I use maple syrup instead of molases...because I hate molases
    1 1/2 c. flour
    1/4 tsp salt
    1 tsp soda
    1 tsp baking powder
    3 eggs
    1/2 molasses
    1 c. fat-free buttermilk
    1/2 c applesauce
    1 tsp ginger

    I love pancakes and I like Blueberries..this is damn delicious..I hope that you'll like it too..

    Healthy Blueberry Pancakes

    Ingredients

    1 cup soy milk
    1/2 cup water
    1 cup whole wheat flour
    1/2 cup stone ground cornmeal
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 cup fresh blueberries
    2 tablespoons vegetable oil

    Method

    Preheat oven to 200 degrees F (95 degrees C).
    In a small bowl combine the soy milk and water.
    In a large bowl, combine the flour, cornmeal, baking powder, baking soda and salt. Stir in the soy milk mixture just until combined. Fold in the blueberries and let the batter sit for 5 minutes.
    Lightly oil a skillet or griddle and heat over medium heat. Pour about 1/4 cup of batter onto the hot griddle and cook until pancakes are bubbly on top and edges are slightly dry looking. Turn and cook until pancakes are browned. Transfer to a baking sheet and keep warm in the oven while cooking the remaining batter. Serve warm with syrup or jam.

    Ingredients for Wheat Griddle Cakes
    • 1 cake
    • FLEISCHMANN's YEAST
    • 1 cup milk, scalded and cooled
    • 2 tablespoons light brown sugar
    • 2 tablespoons shortening or butter, melted
    • 1 cup lukewarm water
    • 2 cup sifted flour
    • 2 eggs
    • 1 teaspoon salt
    Instructions
    1. A PLATE of "wheats" is a breakfast treat any season of the year.
    2. Dissolve yeast and sugar in lukewarm liquid.
    3. Add shortening or butter, then flour gradually, the eggs well beaten, and salt.
    4. Beat thoroughly until batter is smooth.
    5. Cover and set aside for about one hour, in a warm place, free from draught, to rise.
    6. When light, stir well and bake on hot griddle.
    7. If wanted for over night, use one-fourth cake of yeast and an extra half teaspoon salt.
    8. Cover and keep in a cool place.
    9. NOTE:- All batter cakes are better baked on an ungreased griddle, as they keep their shape and do not follow the grease.
    10. You will be rid of the disagreeable smoke and odor of burning fat.
    11. Your griddle need not necessarily be of soapstone.
    12. If you have an old griddle and clean it thoroughly, being sure to remove all burned fat or batter, it can be used in the above way.

    I made these yesterday. They were so good!!!
    1 cup whole-wheat white-flour (King-Arthur makes this and you can get it at Trader Joes)
    1/2 tsp baking soda
    1/8 teaspoon salt
    1 TB agave nectar or honey
    3 eggs
    3/4 cup low-fat cottage cheese
    1/3 cup milk or rice milk
    1 TB veggie oil

    Mix all wet ingredients together, add dry ingredients. heat a non-stick pan coated lightly in oil to medium heat. Drop by 1/4 cup and cook 3 minutes or so on each side.
    I topped mine with mango, strawberries, blueberries, rasberries and lemon juice with honey.
    These were THE BEST pancakes I have ever had. They were so light and fluffy. I think they would be awesome with bittersweet chocolate and strawberries.

    I did the same as above but replaced the cottage cheese with ricotta cheese and it turned out even better, especially with lemon zest and blueberries in it.

    The maple syrup goes better with the strawberries. The lemon and blueberries go better with confectioners sugar and lemon juice on top.

    Heat 1 cup pure maple syrup and 3 bananas, sliced horizontally and then cut into 1-inch chunks in a medium skillet over medium heat. Cook until hot and bubbly, about 4 minutes. Serve the pancakes immediately with caramelized bananas on top or alongside.

    Sauce: 2 tablespoons butter. 1/2 cup orange juice. 2 tablespoons fresh lemon juice. 2 tablespoons honey. In a pan, add the butter, orange juice, lemon juice and honey. Simmer over high heat for 1-2 minutes, stirring constantly. The syrup should be thick and bubbly. Drizzle the syrup over the pancakes and serve immediately.
