This will make the oldest and orneriest squirrel as tender as a mother's smile. 2 squirrels, dressed and properly prepared 2 tablespoons margarine 1 cup Pepperidge Farm Herb Seasoned Stuffing 1/4 cup and 1 tablespoon water 1/2 cup onion chopped 1/4 cup celery, chopped 1/4 cup walnuts 1/2 teaspoon parsley Poultry seasoning 2-4 strips bacon...depends on size of squirrel Aluminum foil. 1. Preheat oven to 400 F. 2. Put margarine and water in a medium sauce pan. Boil to melt margarine. Stir in stuffing mix, onion, celery, walnuts, and parsley. 3. Lay squirrels on their backs and place stuffing in cavities. Sprinkle with poultry seasoning. Lay 1 to 2 strips of bacon on top depending on squirrel size. Wrap tight in aluminum foil. Place in oven-proof dish. 4. Bake for 1-1 1/4 hours depending on size of squirrel.
