roasted red pepper cream cheese on crackers.... and you can't have pizza or lasagne without mozzarella
Cheddar cheese for melting on crackers Swiss for on sandwiches and burgers Gouda with herbs/pepper/garlic for just nibbling plain on crackers and Old nippy (turned into a cheese log usually) 'round the holiday season with crackers oh and brie and chevre for nibbling with crackers, chevre's especially good on little slices of pumpernickel and with some smoked salmon, mmmmmmm. (there's a store about a 15min walk from my house called hte Bulk Cheese Warehouse, I'm in love with it)
Monster cheese is my FAVORITE! yes I know it's not really MONSTER cheese, but I dont know how to spell it and I've always called it monster cheese.

I love cheese, don't ask me which cool cheeses I like. My boyfriend knows the names but I don't. I just eat them... yum. I LOVE cheese. I like cheddar, munster, provolone, brie, swiss, spicy jack, everything... just kidding, I don't like smelly cheeses, and blue cheese.
I love cheese...I especially like provolone, gouda, and feta. And pepper jack. Mmm, but I pretty much like all cheese, but not blue. Ick.
cheese is spoiled milk. not my favorite food but i don't hate it either. i don't care for anything chedder related and i'm not into 'blue' cheese either. but that still leaves a LOT of territory. i DO like jacks, and mozarellas and many of the odder varieties. goat cheeses are mostly too dry, but there are exceptions bree is great too, although i usualy don't eat the 'skin' which my wife likes (she leaves the crusts of pies for me which i like as much or more then the fillings so it kind of works out) i really do love renetless cheeses in cooking. cheese, shrooms, and avacadoes, two or more in combination, are my favorite meat substitutes for meatless/vegitarian meals. and of course in combination with pasta, but NOT that damd mac and cheese that comes in a box, with the dehydrated cheeder sauce powder. potatoes uggly and rotten (au grotten) is good too. yup cheese is ok. some cheese. some of the time. melted over stuffed giant shrooms, that sort of thing. being unconventional is hip cheese is a bit too much on the conventional side so i think to say having to like cheese to be hip is a direct and opposite contradiction to my perspective. mundaneness (gratuitous conventionality) is for twits but there are certainly far more mundane things then cheese. like aggressiveness, austentation (trying to impress people), organized monotheism, and the private passinger automobile, to name the top of the list. =^^= .../\...
cheeeese. yum. i prefer the hard cheeses on salads and such, medium soft cheeses fresh, soft cheeses i prefer cold (a travesty, i know) on bread. but i like nearly every cheese. haven't found one i hate yet.
