    Hey man,

I went vegan like a year ago bro, and like suppliment wise- i havent really come across any really good faux-dairy cheese or whatever. Soy milk is great tho- truly good. Honestly, after findin out all the disgusting facts about milk, and after being away from it (feels great-clarity), i just have NO desire to go back to dairy and dont miss it a'tall. Also man- its a noble cause to not support the pain and suffering of cows bred into the milk/cheese industry.

    good luck man!!!!!!!!!!!!!!!!,
    Pat

hey, Derek: what are you needing subs for? how do you use them?
I bake with soy (easier to grab, taste is not as important) and when I (rarely) drink a milk, oat or almond are on the list.
I have not found a good plain soy yogurt.
The Uncheese Cookbook's recipies for various loaf, block crock and sauce "cheeses" are far better than any supermarket try.
See if your library has it or can get it.

i found a good vegan mozzarella at the grocery store i work at.... but i cant remember the name of the brand. but what I'm saying is that vegan "cheeses" do exist in the grocery store, you just got to try some out.

i think the brand was "vegan gourmet" but I'm not sure.

    EDIT:
    i found there web site.
    http://www.imearthkind.com/Main.htm

the tase is wonderful. the melting is ok.
its 100% dairy and casein free.

i want to try out the other flavors. ive only tried the mozz so far.

B 12 can be, and is, cultured as a yeast as well.

The negative health effects of bovine growth hormone is reason enough to stop drinking milk.

I prefer a 50/50 mixture of soy and rice milk for drinking and for cereal.

Nutritional Yeast is a good substitute for parmesan cheese topping, I like it on pizza & pastas. I haven't really found a good fake cheese I like, but if you try them out, make sure they have no casein (milk protein). If they say they're vegan, even if they have B12, the B12 probably comes from yeast sources. Most vegan companies are pretty strict about it and wouldn't use an animal source, but be sure to check the labels. Follow Your Heart is a good brand for "cheeses" and I love their veganaise. For margarine, I like Earth Balance.

    Good luck! :)

    from Vegetarian resource group:
Reliable Vegan Sources of Vitamin B12

A number of reliable vegan food sources for vitamin B12 are known. One brand of nutritional yeast, Red Star T-6635+, has been tested and shown to contain active vitamin B12. This brand of yeast is often labeled as Vegetarian Support Formula with or without T-6635+ in parentheses following this new name. It is a reliable source of vitamin B12. Nutritional yeast, Saccharomyces cerevisiae, is a food yeast, grown on a molasses solution, which comes as yellow flakes or powder. It has a cheesy taste. Nutritional yeast is different from brewer’s yeast or torula yeast. those sensitive to other yeasts can often use it.

The RDA for adults for vitamin B12 is 2.4 micrograms daily (1). About 2 rounded teaspoons of large flake Vegetarian Support Formula (Red Star T-6635+) nutritional yeast provides the recommended amount of vitamin B12 for adults (2). A number of the recipes in this book contain nutritional yeast.

Only One, you are thinking of rennet, perhaps?

I get nutritional yeast in bulk at the co-op, so I can't help you with brands, but drummin mama mentioned one brand above. It's not necessarily refrigerated, at least not in the stores around here. You should be able to find it at healthfood stores & co-ops, or possibly where vitamins & supplements are sold.

Quick Q - Are nutritional yeast and brewer's yeast the same thing? I don't have a real hfs, with bulk foods and everything. But there's an almost decent hf section in my Kroger. I went down there looking yesterday and I couldn't find nutritional yeast. But there was a little can of brewers yeast on the shelf, which I tried and liked (nutty flavor...) :)

Quick A - they are different... yet they are the same species of yeast. all in all nutritional yeast is not active and just better all together.
