Today was my first time cooking with tofu. I've had premade meals with it in there, but I've never actually made it from a recipe myself (guess I was being lazy). I made a Spinach Tofu scramble this morning and it turned out awesome! I made a little tofu breakfast pocket by stuffing it in a pita pocket. It was really good. So now I am going to search for more recipes with tofu in them. I'm so excited that I finally put the tofu that I've had to some use. I was talking to my Dad and he said something about a tofu press where I guess you squeeze most of the fluids out of it... has anyone heard of such a thing? Is it necessary?
There are many tofu meals on vege websites. I love tofu. It's simple to come up with a tofu recipe. Happy tofu cooking!

From what I've heard you can just set the tofu between two plates and put a somewhat heavy object on top (brick, book, etc) and just let it sit for a while. You're supposed to have enough weight to the point that the sides bulge but do not break. That's awesome that you finally decided to try it though. I'd never had tofu in my life until I made tofu stuffed peppers a few months ago. I was a little surprised that people complain about not being able to get enough soy in their diet...tofu is so versitile, I don't see how it would be hard. I think my next adventure into tofu-land will be with stir-fry too so definitely let us know how it goes!
I love tofu, too. I need more recipes for it though. Maybe we all need to get together and have a tofu potluck.
i put tofu in most of my cooking. if i'm using a non-veg*n recipe as a basis for what i'm doing, i'll veganize it with some tofu.
Tofu's cool. I only use it occasionally and I've only really discovered it recently, but it's nice marinated in stir fries. There's a recipe on vegweb for jerk tofu, which is great. Squashing tofu (plates and some books, as BungalowBrad says) is useful if you want to marinate it because it allows the curd to absorb more of the marinade.
I didn't care much for tofu until my girlie made some with some bok choy, roasted tomatoes, and hummus. It was so good. So now I am going to try to cook with tofu and see what I can come up with.
