ok ok eggplant parm...HECK YES

    i loveeeeee eggplant parm. its the best. esp when your mama makes it! if you havent had it, try it. i will freaking ship it to you if you havent...it would have to be overnight or the fastest kind and it would frozen but seriously even if you dont like eggplant...youll love eggplant parm!

    we have an eggplant parm on our menu at work.........

    Ive never tried it.

    I just made some of that with my friend... MMMM. We make it sometimes at the coop i work at too.

    Eggplant parmigiana = a toasted sandwich made with eggplant and cheese.

    I digg the eggplant but I can do without all the cheese. :p

    Mama doesn't eat eggplant - and cheese hates her.

    But I have only given eggplant ONE try in my entire life. My mom made it... well, it looked like she was trying to "hide" eggplant slices in pancake batter. Don't know what it was supposed to be, but it tasted awful.

    Does anyone have any dairy-free recipes for eggplant?!? I really think I should give it another try, but so far every recipe I've seen either looks downright scary, or is smothered in cheese.

    just make it with out the cheese. you bread the eggplant then pour some tomatoe sauce on it and add what ever spices ypou want...or i never had it vegan cheese but try it on it. im sure it will still kick ass. omg...im craving it now. its freak'n the best stuff ever!!!!!!

    I love to cut it in half lengthways, put on a baking tray flesh side down with olive oil and herbs, black pepper and sea salt. Into the oven for half an hour on mod. heat, turn over, sprinkle with more herbs, bake for a little longer then I just eat it like that. Yum!
    Or you could chuck it on a bbq with other yummy veg, or skewer a stick with chunks of aubergine (eggplant), and courgettes, peppers, onion and sometimes I'll stick on a bit of tofu and put it on the bbq. Mmmmmm!

    I was thinking of trying to make this with a vegan cheese sometime in the near future since I can't find any parmagan cheese made without rennet and I'm trying to stay away from dairy anyway. I will let you all know how it works out.

    I love eggplant, sometimes I'll make a veggie stack with eggplant slices, large portabella caps (my favorite food on earth), tomatoes, zuchinni, onion- whatever veggies I feel like putting in there. I usually bake these with olive oil and balsamic vinager... it's awesome, you can also put cheese in between the veggies if you eat cheese.

    that sounds pretty good. if you get a pot and put a timy bit on oil in it and some veggies like onions, carrots and celery and cook em till slightly brown, and add some tomatoes sause, you got the sauce for it right there! its so good. then cut the eggplant, dip in breadcrumbs (with or with out dipping in eggs) and bake it in the sauce that comes out pretty awesome

    Sprinkle salt on both sides of eggplant slices to remove the slimey taste. Kosher salt seems to work quite well.

    Oh, I am glad that someone made a post about this! I love eggplant parm. I love eggplants in general. I could never exactly figure out why so many people that I know hate eggplants. It's personal preference, of course, but that still doesn't mean that I cannot be confused as to why :confused: . I agree with you though...even if one doesn't have a taste for eggplants, they should still try eggplant parm.
