I usually just substitute honey for sugar in food, but as far as dough goes, does honey effect it differently than sugar? This is my first time making any kind of dough, so I am unfamiliar with how the different ingredients play out.

    Peace,

you don't need sugar for pizza dough

just flour, yeast, water, salt, a tiny bit of olive oil. The purpose of sugar in yeast doughs that are not for sweets, is only as a food for the yeast. But yeast also grows of the carbohydrates in flour. This of course works better with white flour then with brown one, but it works also without sugar. Just give it more time, and heat around 30-50° C.
