quick food

    last night i made dinner. i was going to make potatoes and ________, but i couldnt fill in the blank so it was potatoes and salad. the cook books we have take ingredients we dont ususally have. what are some quick easy things to make with stuff around the house?
    and whats some good stuff for bagged lunches?

    One of my favorite is a baked potato with anything I feel like putting on it & have around the house at the moment. So I'd have just added stuff to the potato until that was my entire meal. If you've got a computer in your home, I'd do a recipe search. I have about 6 or 7 favorites recipe websites, but allrecipes.com has a search by ingredients where you can put a few things you have in your house into the engine, and it'll come up with thousands of dishes that can be made from them. That's my favorite site for last-minute ideas.

    You can use a tortilla shell to wrap up black beans & precooked brown rice with some salsa & maybe some avocado or black olives pretty quick, and they're just as good cold as hot! Come to think of it, I wrap just about EVERYTHING up in tortilla shells! :)

    When I'm gonna be out & need a nonspoiling bag lunch, I like to choose:
    nut-butter & banana tortillas with an apple or orange
    a granola bar with applesauce
    nutty trail mixes with dried fruit and a HUGE water bottle
    veggie sticks (with dip for my kids) and some berries

    Usually though I bring a small cooler. I have one that my mom gave me when I was still in school that's just big enough for a cup of berries & a teeny ice pack that works well if I'm alone, and a larger one for bringing when the kids are with me. Between that and our reusable dishes I can bring just about anything we want to eat. Standard "field trip" lunches are:
    cold pasta salad with fruit & maybe a handful of trail mix
    fruit salad with a granola bar
    pita or tortilla wrap sandwiches with applesauce
    homemade muffins with fruit & a thermos of hot soy chai
    yogurt (soy for me) and granola with berries
    and Asian salad with mandarin oranges & a thermos of hot tea

    Someone from this site (and I do so wish I could remember who to give credit to!) sent me a link months ago for the vegan lunchbox - http://veganlunchbox.blogspot.com and the kids & I have been having TONS of fun going through and choosing 2 new lunches to try each week!

    Salad is good! I have this problem too when I want to make a meal. Other than meat substitutes and vegetables I don't know what to fill that blank with.

    For bagged lunches, I think fruit is always good.. cucumber sandwiches.. whole grain crackers. Mmm that sounds yummy.

    thanks homeschoolmama i think i will try out allrecipies. and i know how it goes with tortillas, we must have those at least once a week. acually, i just had a potato and veggie burrito for lunch. :p
    and magical fire lady, how do you make those sandwiches? i had them at some thingy and they were really yummy. and good crackers can beat chips ass any day! :sunglasse
