lunch - or why I love summertime

    Lunch today - cherries & blueberries, low fat wheat thins (the kids had cheese-its) and jicama with fat-free catalina dressing. (the kids had ranch) And iced chai to wash it down.

    When else are ALL of the fruits & veggies on sale? Even the kids love eating veggie with me when it's fresh fruit :)

    YES! I am super duper excited about just eating fruit/veggies, etc for lunch. It's very refreshing. Iced chai sounds good. Do you have a recipe?

    cherries and blueberries aren't in season here, but i work on a fruit farm and basically just eat strawberries and broad beans at the moment :D yippee! fruitarian, local, fresh and yummy :D:D:D yay for fruit!

    What exactly is jicama? I saw it at the store yesterday, and see that lots of vegetarians seem to eat it, and it just looks good in general. Mmm, that lunch looks great!

    For our chai I just take 1 cup of our favorite chai tea, 1 cup of soymilk, and about 3 cups of ice and run them through the blender until smooth. You could add just about anything to that. Sometimes I'll add a little cocoa powder, and during the fall we add a touch of vanilla and a little cinnamon & nutmeg. But really, just experiment... it's GOOD!

    Jicama is a big veggie. Looks like a fat potato or an ugly rutabaga, and tastes like peapods with the texture of an apple. Most people either love them or absolutely hate them, so if you're curious you might want to find a few friends to share it with, just in case you don't like it. I've heard you can cook it, but we like it raw.

    Try YogiTea's Black Chai or HonestTea (they have tea bags now!)'s Kashimiri Chai...both are really tasty (and organic!! :) ) :) and instead of cocoa powder chocolate silk works wonders...also if you are really lazy Silk makes a Chai soy milk that's actually quite good. :)
