    Hey,

I used to love going to Chinese restaurants and getting dishes like braised tofu, Buddha's delight, etc. The generically-named Brown Sauce always had the right seasoning. Later I realized that the savory sauce probably had animal ingredients in it.

So I've been searching high and low, through the internet and cookbooks, for a good "Brown Sauce" recipe, that does not contain beef extract, oyster sauce, and the like. However, the only suitable recipes I could find taste gross! Totally wrong for a good tofu dish!

I'm wondering if anyone has any recipes or advice. Anything would be much appreciated! I just can't find what I'm looking for, and I'm desperate for a good, home-cooked, Chinese bean curd meal!

Hey there :) Here's one to try:

    1 Tbs. sesame oil
    3Tbs. ground sesame seeds
    2 Tbs. soy sauce
    2 tsp. rice vinegar
    1 1/2 tsp. sugar
    1/8 tsp. cayenne pepper
    1/2 tsp. salt
    1/8 tsp. white pepper
    1 Tbs. vegetable oil
1 Tbs. vegetable stock or water

Beat with a fork or whisk until you have a smooth paste. Pour it over a noodle dish or whatever.
