I miss mashed potatoes & gravy! I know it probably sounds funny, but while I don't miss meat... I DO miss gravy! Is there a veggie-friendly gravy substitute out there??? This is one of my old favorite comfort foods, and I'm sitting here with seasonal allergies just drooling on my kids' taters. love, mom
I love just plain mashed potatoes and butter... but if you are vegan... I know at one of the diners in town that has vegan options they have vegan meatloaf mashed potatoes and cashew gravy. Its apparently really good but I have not tried it yet... I will look for a recipe for you!
Found this recipe for you. Hope you like it... CASHEW GRAVY This is a nutritious, non-dairy gravy. 2 ½ C. filtered water 2/3 C. cashew pieces (from our bulk bins, pieces are a nice low price) 2 Tbsp. tapioca flour, arrowroot, or corn starch 2 Tbsp. Braggs liquid aminos 1 ½ tsp. onion powder ½ tsp. sea salt 1. Blend all ingredients in a blender until smooth. 2. Cook in a double boiler on medium heat until thick. Don’t let the double boiler scare you—just place a small pot inside a larger pot full of water.
Mama, Why don't you do a vegan gravy, just like a cream gravy? i.e.vegan spread(not butter) and flour to make roux, then add vegetable broth(not chicken stock or cream). you could sub soy for cream, but I haven't tried that. Like I've said, I am not a big soymilk/tofu person.
instead of a beef or chicken base i often use vegamite , marmite or liquid smoke ... then make like normal gravy,,,,
Ohhh, thank you all so much! I'm going to have to try all of those out. This is the one food that I'm constantly tempted to "cheat" with, and while I don't want to do that... well, some days it's pretty tough to resist love, mom
there are also dry gravy packets. Hain makes some. Check your local healthfood store. Tofurkey has a frozen gravy you might want to try. Gravy (and pretty much everything else) is definitely not offlimits to veggies!
this is more a mashed-potato related post, but anyway... I LOVE to make mashed 'taters out of the small red potatoes, and leave the skin on! mmmmmmmmm, so good. But I eat dairy and eggs so I load 'em up with butter and ground pepper. I never liked gravy even when I ate meat...
hains makes a yummy veggie gravy i make mashed potaotes with veggie gravy and TVP all the time.. i mix it all up with some corn and the kids like to "dig" for "gold" on their mountian of potatoes
its a little more expensive, but......use some purple potatoes to make your mashed potatoes, then clarify some butter, throw some herbs d' provence in the butter, mix it around, over top of the potatoes its really great, clarifying butter is, taking all the white crap on the top of the melted butter off, and leaves just the butter, no solids, or water on the top :-D Anyways...Yes Do this and you'll have great mashed potatoes, Always remember use coarse salt, not iodized salt, it tastes a lot better sorry its so in depth, i got a lotta recipes from going to culinary school , designing a vegetarian restaurant anyways, Later
