While in the Bay Area (San Francisco, California's environs) I spotted this television segment on PBS. I absolutely loved the concept, but I found many of the ingredients to be totally disagreeable with me. I'm -- oddly enough -- more of a bland food diet supporter. Cilantro, balsamic vinegar and chili peppers are not going to be found in anything I eat (unless the chef slips it in by mistake).

Is it possible to be a bland hippie ?

you're crazy....=) cilantro isn't that "spicy" and green chiles aren't even hot... what do you usually eat?

What's a hippie? A lot of long hair folks I know who may or may not qualify as hippie are pretty much meat and potatoes.

And meepmeep's right, those ingredients are pretty tame.

Anyways... my father can't handle garlic or spicy foods and he does most of the cooking. His boiled potatoes, steamed veggies and spaghetti is really good. Despite being spoiled with a great variety of ethnic cuisine since living in Toronto I still like my father’s cooking cos he never overcooks or undercooks, he cooks it just right.

So yeah, spices are not everything, if you can cook to just the right tenderness that will be enough to bring out the most flavour of the food.
