Okay, when did this happen? I used to think they were the nastiest little monsters on the planet, and now I could eat them every day!

I think I'll blame it on my daughter. My body has gone through so many food-related changes since my pregnancy with her. I used to hate root-beer, and now I love it. I hated spicy food, and can't get enough now. I ate meat & liked it, and now I'm a vegetarian that could barely stomach meat before switching.

Who has yummy black bean recipes? So far I'm just adding them to all my Mexican dishes... which is probably about 1/2 of my diet ;)
    love,
    mom

black beans are good mashed up and mixed with hummus! I never make hummus from scratch but I usually throw mashed up black beans and sometimes spinach in the mix and it's really good.

Also with brown rice and vegetables, veggie boullion or hot sauce or something.

I can't stand the kind you have to rehydrate though. It seems like no matter what they never seem fully cooked. Yuck.

^^ you mean not canned? get a pressure cooker and add salt at the end.

I use turtle beans in chili, dal, as breakfast, on pizza in salad (the way kidney beans are used)
oh, never soak more than 18 hours. ewwwwww...
