Anyone got a good recipe for vegan pancakes?

    Or at least eggless pancakes for now. I'm starting my gradual move to veganism, and I'm starting by ditching eggs, which is going to be the hardest for me. So any advice for that would be greatly appreciated, but seriously, can you help me out with the pancakes? Cuz pancakes are yummy and the recipe I have uses eggs and milk.

    Just use an egg replacement. YOu can buy them at the supermarket or a health food store. It's a white powder that you mix with water or milk and then just stir into the flour. I use it all the time to make pancakes with soy milk and it is gooooooood stuff!!

    easy vegan whole grain pancakes
    1/2 cup whole wheat flour
    1/2 cup rye flour
    1 tablespoon soy flour
    1 tablespoon white sugar
    1 1/2 teaspoons baking powder
    1/8 teaspoon salt
    1/8 teaspoon ground cinnamon (optional)
    1/2 teaspoon vanilla extract (optional)
    1/2 cup water
    1/2 cup soy milk
    1/4 cup chopped pecans

    In a medium bowl, stir together the whole wheat flour, rye flour, soy flour, sugar, baking powder, salt and cinnamon. Make a well in the center, and pour in the vanilla, water and soy milk. Mix until all of the dry ingredients have been absorbed, then stir in the pecans. Heat a large skillet or griddle iron over medium heat, and coat with cooking spray. Pour about 1/3 cup of batter onto the hot surface, and spread out to 1/4 inch thickness. Cook until bubbles appear on the surface, then flip and brown on the other side. Serve warm.

    Courtesy of 'How it all vegan' (the book has some variations too.)

    2 cups of flour
    1 tsp baking soda
    1 tsp baking powder
    2 cups soy milk
    2 tbsp oil
    Accompaniment of choice (fruit, maple syrup etc)

    In a large bowl sift the flour, baking soda & baking powder together.
    Add the milk & oil
    Mix together until just combined
    Pour some mix into a frying pan, cover with a lid
    Cook on meduim heat until the centre starts to bubble and become sturdy
    Flip over the pancake and cook the other side until golden brown
    Repeat until you have used up all the batter
    Serve with accompaniment of choice

    looking through vegetarian sites for recipies i came across this

    Egg Replacers (Binders)
    Any of the following can be used to replace eggs:


    1 banana for 1 egg (great for cakes, pancakes, etc)
    2 Tablespoons cornstarch or arrowroot starch for 1 egg
    Ener-G Egg Replacer (or similar product available in health food stores or by mail order)
    1/4 Cup tofu for 1 egg (blend tofu smooth with the liquid ingredients before they are added to the dry ingredients.)

    Beleive it or not, the military is a good source of vegan recipies. They need recipies for situations without refrigeration.

    Hey, Feministhippy, here is one from Vegan Vittles:

    3/4 c. whole wheat pastry flour
    1 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/2 c. nondairy milk
    1 tsp. vanilla extract
    1 granny smith apple, peeled and grated (about 3/4 c. lightly packed)
    3 TBS raisins (optional)

    1. Place the flour, baking powder, and cinnamon in a medium mixing bowl, and stir them together.
    2. Pour the milk and vanilla extract into the dry ingredients, and stir them together to mix well. Stir in the grated apple. Then stir in the raisins, if using.
    3. Mist a large skillet with non-stick cooking spray, and place it over medium-high heat. When the skillet is hot, spoon the batter using two level tablespoonfuls for each pancake. Spread out each pancake using the back of a spoon.
    4. You will need to cook the pancakes in several batches depending on the size of your skillet. Cook pancakes until the bottoms are brown, adjusting the heat as necessary. Carefully loosen the pancakes, and turn them over using a metal spatula. Cook the second side briefly, just until golden.
