Really soft scrambled eggs make good finger foods and are easy to chew.

Cheerios are wonderful too, as snacks.

    Any veggie steamed is good.

Soft fruits are easy to chew, and are sweet. Babies like that.

Even some fish, making sure there are no bones.

Oh yeah, the baby I was babysitting loved rice.

wow, i find it hard to believe that they won't eat the same thing more than once every 5 days... my joey LOVES his steamed carrots & he'll eat them at every meal if i make them. i don't go out of my way to make anything just for joey, he eats what we eat mostly - of course there's a few things i don't think he's ready for yet - like sushi, my big boys love it. i made yellow rice last week - he ate that with both hands! he really likes baked sweet potatoes, mashed potatos, any steamed veggies, baked chicken, pork chops, anything with barbq sauce, spagetti & mashed meatballs, all types of breakfast foods (except bisquits & gravy, one of my favorites - yummy for mommy!). i give him hotdogs too, i just make sure to dice it up small. cubed cheese, but i cut it smaller than the prepackaged cheese cubes. lots of fruit, sliced bananas, & he loves to gnaw on a whole apple - but he's got almost a full set of teeth already and has been chewing since about 6 months. he doesn't EAT a whole apple, just nibbles on it, i'll bite it to get it started for him. i tried cutting up apple slices for him one time and you would have thought i was slicing him up! what a fuss! for lunch a lot of times i'll give him leftovers from the night before. i'm pretty lucky - he's a good eater. oh yeah, he's almost 16 months right now.

ya know, he throws all his food on the floor too - he also likes to stash the stuff he likes down in the high chair so he can save it for it later... lol!!! i clean his chair after meals but i'll catch him over there looking for crumbs... i keep his snack items on the front part of the fridge shelf so when i open the fridge he can grab something if he's hungry.

My boyfriend's niece, who is 1 1/2, LOVES hummus on anything! You could probably spice up some of the food you currently feed your baby by spreading a bit on top. Also, maybe some cold bean and/or pasta salads. They can be healthy, solid without being too hard, and very delicious.
For breakfast, have you tried oatmeal or polenta? Polenta was a favorite of mine as a baby and still is. It's easy to eat and you can flavor it with pretty much anything. A good way to fix it for breakfast is with some maple syrup, a splash of milk and some sliced banana.
