Vegan Blueberry Pancakes [size=-1]- 1 1/2 cups flour - 2 tbsp sugar - 3 tsp baking powder - 1/2 tsp salt - 1 "egg replacer" - 1 3/4 cups soy "milk" - 2 tbsp vegetable oil - 3/4 cup blueberries (fresh or frozen) [/size] [size=-1]Sift together the dry ingredients. Combine separately the "egg replacer", soy "milk" and vegetable oil. Add about 1/2 of the liquid to the dry ingredients and then add the blueberries and mix. Continue to mix in the rest of the liquid, being careful that it does not get too runny - it must form a circle on your griddle. Heat your griddle or frying pan to approximately 380F (medium-high heat.) Grease the pan or griddle with margarine. Use about 1/3 cup of batter for each pancake. and bake until bubbles form on top. Then turn over and continue baking until golden brown. Serve with real maple syrup - delicious ![/size] I'm not crazy about pancakes, but these sound good
No, if you happen take check out my posts for the last year then you will see that I've tried a veggie diet off & on for yrs as have a couple of my children. I usually like having yogurt for breakfast and I like extra cheese on pizza.
Well, for not being vegan, you certainly seem to have the BEST vegan recipes I've seen! I'm totally going to try these pancakes... Squawkers, I feel like I owe you a good recipe, lol... Here's one I've tried, which can be made vegan or just vegetarian. [the only thing not vegan would be the cheese, which you could subsitute with soy cheese or omit it if you wanted a vegan product]: [by the way, I pulled this from allrecipes.com ITS AMAZING] INGREDIENTS: 3 teaspoons vegetable oil 1 onion, chopped 4 cloves garlic, minced 6 cups canned kidney beans, drained 2 cups water 3 tablespoons chili powder 2 teaspoons ground cumin 4 teaspoons prepared mustard 1 pinch cayenne pepper, or to taste 3 tablespoons soy sauce 4 cups cooked and mashed sweet potatoes 12 (10 inch) flour tortillas, warmed 8 ounces shredded Cheddar cheese DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Heat oil in a medium skillet, and saute onion and garlic in until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Most recipes take me longer then what they say it will....Thanx for new recipe, always on the look-out for more. My son likes putting mashed up bananas & apple juice in pancakes, which all the other kids thinks is a real treat...so I guess I should make the blueberry ones I found & posted earlier. I guess I first got interested in vegetarianism when I was in 8th/9th grade...thanks to my favorite teacher who happened to be veggie. I never quite last to long on vegan diet...as ya can see I end up eating stuff with hidden ingredients in them.
