    Sterilised gallon demijohn
    4lbs warm honey
Boiling water to fill dj up to 2" from top
1 tsp yeast (packet or natural) in cup of warm water
    1 tsp sugar

Leave somewhere warm for 2 months to 1 year, it's ready when it stops bubbling and is clear. Occasionally shake the dj. When it stops bubbling and if shaking it doesn't produce more bubbles, put it outside for a couple of hours one time, then bring back into warmth. If it still isn't bubbling and if it's clear it should be ready. This shouldn't be overly sweet like shop bought mead. The longer you leave it the more the honey turns to alcohol. Strengthwise it can be anywhere between 14% - 18%. I have some on the go I did last August that I'll use late summer this year. Worth the wait!

    Mmmm

I love making mead - a good note though, when making mead, use organic honey if possible, because processed honey has chemicals in it which prevents a lot of the fermentation. Even if u use 50% of the honey as organic.

Meade is an Irish wine made traditionally from honey and herbs...you have to like honey though because it has a strong flavor.
