Curried Carrot Soup--this stuff is incredible!! 3/4 cup chopped leeks, onions or shallots 2 TBLS butter/oil 2 tsp. curry powder 1/4 tsp. pepper 1 1/2 lbs. carrots 2 cups chicken broth In large pan, saute leeks in butter until wilted. Stir in curry powder and pepper. cook for a few minutes longer. Add carrots and broth. Cover and simmer until carrots are tender. process in blender. serve hot or cold.. from "cooking from the garden"
