pastas are always healthy, just make sure to check what kind of suace that you are using nachos + cheese + salsa is amazingly good, haha i enjoy bagels with margarine, lettuce, tomatoe, cheese, and mayo... or this can also be a sandwhich veggie wraps are good, just experiment on what vegetables are the best on it for you, i enoy lettuce, green peppers, cheese, pickles, cucumbers, and well anything i can find, haha i also eat a lot of fruits and vegetables and any vegetable can taste amazing with the right dip.
have you tried fake meats? their usually pretty good....try shopping at your local health food store maybe, they usually have a ton of good veggie/vegan/organic stuff...
Refried bean tacos! Not the healthiest choice but with some sour cream, cheese, & tomato (or whatever else you put on it) they rock. Plus they only take like 5 minutes to make.
there are some really good websites out there, do a search, there is one called http://vegetarian.allrecipes.com/ it lets you give them the ingrediants you want to use and it shows you all the recipes with those ingrediants
be strong and don't give up. i've been one for almost three years in a very omni family where meat is centralized in everything they consume. they learn to adjust (my mom took almost a year or so to come to the conclusion that it wasn't something that wasn't just going to go away.)
They don't eat spaghetti? Or Beans? Try something that's not a vegetable or fruit. It's hard to imagine someone not eating grains,...or legumes...
