Hey everyone! I got this recipe from my favorite vegan cookbook Vegan World Fusion Cuisine from the Blossoming Lotus restaurant in Kauai. Everyone should check this book out. If you check out Vegan Fusion website, they might have some sample recipes and may still have the book for sale. Anyway, here is the recipe for Tempeh Reubens. slice 8oz. of Tempeh into thin cutlets (VWFC says to marinate in Shoyu marinade but I've done with just a little plain shoyu or tamari) Grill or sautee on stove in 2Tbl of oil until until golden brown (you can also bake on 350 for 15 min.) In the meantime...make 1000 island dressing: 1/2 cup vegan mayonaisse (I use vegannaise) 1/2 cup catsup 1/4 cup dill relish 1 tsp. garlic, minced 1/2 tsp. dill mix these ingredients well. I then grill up some saurkraut, toast some whole grain rye bread, put dressing, cooked tempeh and saurkraut and a couple slices of tomato on the bread and VOILA! you've got yourself a tasty treat. It's relatively simple to make and you can modify your choice of fixins' (onion, lettuce, etc.) Enjoy!
sounds yum but could you tell me what tempeh, catsup and dill are? sorry to sound thick, i guess its that whole english american thing!
Tempeh is a form of soy (looks hard and sorta grainy), any health or whole foods store will have it. Catsup, also spelled ketchup, is made from tomatoes, vinegar and sugar and what most people (here in America anyway) put on their fries. Dill is not a big deal if you skip it, as long as you use pickle relish, you should get the desired effect. They are really yummy, I'm craving one right now.
