Tips on Healthy Eating and other issues

    I am looking for any true information on healthy eating and vegetarianism. I have been to vegweb.com and such and looking for more websites like this. I am putting together a cookbook for my local co-op and want to add tips throughout the book like in the tofu tollbooth book. I also want to add tidbits about organic farming and environmental issues that need to be addressed by everyone. Also any tips on composting, going organic, gardening, special diets, etc.
    Could anyone help me?

    all of that stuff can be googled( http://www.google.com ) probably, sounds like a good idea for a book. http://www.taxmeat.com covers most of the environmental problems associated with eating meat and with some agriculture i think... your library probably has some good books on those subjects too...i dont know as far as special diets are concerned, i just try to eat a lot of different stuff that is rich in vitamins and minerals and keep things balanced, like a banana and cereal with vanilla soymilk for breakfast for example, is a great and tasty source of a lot of vitamins and minerals, then maybe a salad later on or some grains as a snack, then maybe some tofutti pizza toward the end of the day or something, you should still probably take vitamins regardless of how nutritious your food is, just to be sure, you dont have to take em everyday probably but everyotherday would probably suffice, and try to make sure they dont have geltain in them, and your probably set health-wise ....i came across one diet that was a very strict vegan diet i think called macrobiotic that was about every food having a yin or yang quality and balancing it all, seemed interesting but didnt really appeal to me, you can google it for more info....
