I would probably wash it again. I have a thing about washed fruit. The pesticides make me paranoid. Also, is there a chance there's a worm in the apple? I usually cut apples before eating for this reason. That way you can see the worm if it's there.

Except when thinly sliced and eaten with cheese, they are generally to sour to eat on their own, although they are known to be good for diabetics. I would just cut them up and make an apple crumble. Jane would probably go 'Ape', but that would be after she had helped me by eating the crumble to save me having to do it.
I baked a sugar-free apple pie for Thanksgiving. I read you should mix sweet apples with sour ones in a pie, so I made it with 2 Honeycrisps and 1 Granny Smith, and some sugar-free apple sauce mixed with a little flour, margarine and cinnamon. The crust was also sugar-free. Came out great!
