Mole in La Paz

@Running Horse That's funny! Well here in Mexico Mole is a culinary delight, and the word negro simply means 'black.' It is not a racial comment, a statement of factual color. The paste in the bags is rich, chocolatey and spicy. It comes in many varieties!

@this is fun Mole sauce is commonly served over chicken. Another dish is called chilaquiles, where there is a plate covered with refried beans, then a layer of corn chips, then some fried eggs, topped with mole sauce! Aweseome!
