I'd have to say Herb Ellis. I grew up watching him play at our church and even met him a few times. Funny, I think I kind of play guitar like him too.
I've been really into Grant Green and Pat Martino lately, respects to John Scofield, of course. I would also say Jack Pearson and Jimmy Herring if it weren't for the fact that both are such ridiculously versatile and complicated guitarists I wouldn't call either straight out jazz - which isn't at all a bad thing
