My co-op has been carrying bags of yellow baby carrots. I understand that carrots can be grown in many colors, from purple-black to nearly parsnip-white, and that it just happened to be the orange ones that took off in popularity when they were introduced to America by Dutch growers. (Do not ask me how or especially why I know this bizzare factoid of useless botanical trivia, I'm actually wondering myself.) Has anyone seen these? Marketing yellow carrots may be an interesting and novel way to get kids to eat fresh, raw vegetables, and may provide creative options for cooks looking to add visual interest to salads and side dishes. But I'm wondering how the paler color affects the beta-carotene content, and if it's still nutritionally worth it?
I have some yellow tomatoes in my fridge right now - well, actually in Matt's fridge. My grandmother used to grow yellow pear-shaped cherry tomatoes, so I'm not surprised. The sweetest tomatos I ever had were these wonderful, tiny yellow cherry tomatoes that I used to get from the CSA in Rochester. They were so sweet the kids and I would eat the entire basket in the parking lot like candy. In the 3 years we participated in that CSA, not a single basket of those cherry tomatoes made it home - and we lived right around the corner. I wonder how the vitamin content of red and yellow tomatoes compare? Have you seen any of those green striped "zebra" heirloom tomatoes? They're delicious. They're green when they're ripe, not "green" unripe tomatoes.
yeah, we had some of those zebra ones a couple months ago. I love tomatoes. I could live on them and them alone. Scarlett.....love the purple carrots. I bet my purple loving kids would eat those.
We've eaten purple haze carrots before! Got them at the co-op, and made purple cole slaw with red cabbage, red onion, and poppy seeds. Have you ever had those blue/purple potatoes?
I first tried them when I was pregnant with Shakti. I'd bought them thinking, blue potatoes! Damien will enjoy these! But I got them made and mashed up, and took one look and I just couldn't eat them myself! I had four or five egg salad sandwiches instead. That was about all I wanted until she was born.
Cole slaw can either be delicious or disgusting, depending on how much creativity you put into it. The purple cole slaw was so-so. The purple carrots didn't grate as easily as their orange counterparts.
Yes they were extremely blue. They looked just like smurf pulp. We called them Potatoes a la Gargamel.
I heard that purple carrots turn orange when cooked. Can anyone verify/refute that? (off to look for purple carrot seeds)
and there are purple beans as well.. those turn green when cooked, but the purple when they are growing sure makes them a lot easier to spot when you are picking them... I found this site highly interesting.. Carrot History apparently carrots were originally purple and red... and more pale fleshed... so the yellow carrots must be a sort of heirloom variety... I would wonder about their beta carotene value because the more beta carotene, the more orange the root will be.... and drumminmama... they do indeed stay purple when cooked...
sorry, don't want to butt in, but just seen this thread.. and yes, yellow carrots do have vauable nutrition.. **edit** ...OOOooops..sorry, didn't see the above post Yellow carrots contain xanthophylls and lutene, pigments similar to beta carotene, which help develop healthy eyes aid in the fight against macular degeneration and may prevent lung and other cancers and reduce the risk of astherosclerosis (hardening of the arteries). These came from the Middle East. found the info here.. in the carrot museum!!!
We grew purple pole-beans this year. They turn green when you cook them. I've heard the same thing about purple carrots, but haven't seen them to try it yet. love, mom
We sell yellow carrots at my work(Boston Pizza, or Boston's for the americans)...they're part of the cooked veggies side dish and I think it's called the caribbean blend or something on the box...I've never tried them, but when we first got them I thought they looked pretty funky
