I have a great recipe for chickpea paprikash! Any short noodles will do, but I always have an overabundance of macaroni to use up. Still working on hitting the nail on my meatless goulash. Just can't quite get it to taste like my mom's yet. And of course mac n cheese. It's so versatile and easy to change up. One of my favorites is an avocado mac that uses pepperjack.
Pasta e fagioli (pasta va zool) I use a different recipe with ham and great northern and garbanzo beans, but it's all good. My granddaughters love it.
