Catchy melodies, new sounds, lyrics with a hidden messege, or just something new? And what makes music sound fluent, do you all think? Without the loops looping till the end of boredom...
And there can't be overused organs/keyboards... The Doors, Grateful Dead, non-Syd Pink Floyd, etc etc etc...
i look for a good base line, and lyrics that have real meaning!! and i am not a big fan of love songs...
i like things that read my mind in the moment.. i like groovy music. instromentals are alright too.. yeah.
I want music to envoke emotions in me. When i hear a song and get that feeling in my gut and a rush of energy surges through my body like a sonic orgasm. Thats how i know i really like a song.
if i'm listening to hip hop, it has to have substantial lyrics. i can't listen to anything that's just a bunch of nothing. usually takes me alot of searching, but it's well worth it. in rock and roll, i'd rather have carefully placed chord changes rather than a band that rocks out. bands like radiohead, phish, muse, blonde redhead... some of my favorites because the chord progressions are so beautiful. if i'm listening to any sort of jazz or "jamband", i like it to have a groove to it, something funky, that i can dance to. it's mostly instrumental anyway, so don't have to worry about the vocals.
Nice interplay between musicians and good musicianship (as opposed to sheer technical virtuosity) are fundamental. Beyond that, it depends on the style of music in question...

Great Guitar, intriging vocals, originality, thats about it... i do like good lyrics, but its not the primary thing i look for in music.
Anything that leaves me wondering how humans could make such sounds... especially stuff with real instruments. Non traditional instruments are my thing as of rite now. Wood winds (clairnet), brass(flute,sax, trombone), strings (cello upright bass). Oh and Cant forget the Progression!
Oh and i did forget the out of the ordinary percussion... anything made with animal skin is cool, wood blocks, bells, whistles!
I look for a very upbeat sound. I like both deep and meaningful and silly lyrics. I love great guitar parts that are simple. I think the best sounding guitar parts don't have to do with how hard it is to play like that. It's whatever sounds great with the the people around you. I like a fun fast base line also.
I look for the guitar man...Its gotta have that crunching guitar sound for me to jam too...but thats when it comes to rock music.
